Chicken Fajita Tray Bake
Total Time: 25 minutes

Ingredients

600g chicken tenderloins

3 capsicums, sliced (yellow, red & green)
- 2 tbsp olive oil

Juice of 1/2 lime
-
2 tsp Planet Organic Paprika
- ½ tsp fine sea salt
To Serve:

Mini tortillas
-
2 avacados, sliced

Greek yoghurt
-
Lime wedge
-
Fresh coriander
Method
Start the Potatoes

Preheat oven to 200°C fan forced.

Add the chicken tenderloins, capsicum and red onion to a large baking tray.

Drizzle with olive oil and lime juice. Add Planet Organic spices, salt and pepper, then toss well to evenly coat.

Spread into a single layer in the tray.

Roast for 20-25 minutes, until golden and cooked through.
