Apple High Protein Ceylon Cinnamon Banana Bread Recipe

Ingredients
Muffin Mix:

3 ripe bananas, mashed
-
2 eggs
-
3/4 cup Greek yoghurt
-
1/3 cup of maple syrup or honey
-
1/4 cup milk of choice
- 1 tsp vanilla extract
-
1 3/4 cups plain flour (gluten-free optional)
-
1 tsp baking soda
-
1 tsp baking powder
- 2 tsp Planet Organic Ceylon Cinnamon
-
1/2 tsp salt
-
1/4 cup vanilla protein powder (optional)
-
1 cup of frozen blueberries
-
1/4 cup desiccated coconut
Topping:
-
Pumpkin and/or sunflower seeds

Method

Preheat the oven to 170°C & line a loaf tin with baking paper.

Mash bananas, then whisk through eggs, yoghurt, maple syrup, milk and vanilla.

Add flour, baking soda, baking powder, cinnamon, salt and protein powder. Stir until just combined.

Fold through blueberries and desiccated coconut.

Pour the batter into the loaf tin. Sprinkle with extra cinnamon and seeds.

Bake for 50-60 minutes, or until a skewer inserted into the centre comes out clean.
- Let cool slightly before slicing. Enjoy on its own, with a tea or coffee, or topped with Greek yoghurt, fresh berries, honey and an extra sprinkle of cinnamon!
