Easter is the perfect time to indulge in something sweet, and what better way than with a homemade Organic Spiced Carrot Cake? But this isn’t just any carrot cake—it’s gluten-free, dairy-free (if you choose), naturally sweetened, and bursting with aromatic warmth.
The magic lies in the spices. Planet Organic Ceylon Cinnamon isn’t just a delicious addition—it’s packed with antioxidants and helps balance blood sugar, while Planet Organic Nutmeg adds a subtly sweet, nutty aroma known for aiding digestion and promoting relaxation. Organic Spiced Carrot Cake
Preparation Time: 20 minutes
Cooking Time: 35-40 minutes
Servings: 8-10
Ingredients:
- 240g gluten free plain flour
- 1 teaspoon of baking powder
- 3 tspn of Planet Organic Ceylon Cinnamon
- 1 tspn of Planet Organic Nutmeg
- Pinch of salt
- 250ml of organic coconut oil (or your preferred vegetable oil)
- 350g raw sugar
- 3 large eggs, room temperature
- 1 tspn of vanilla extract
- 220g grated carrot
- 125g toasted walnuts, roughly chopped
- 75g desiccated coconut
Cream Cheese Frosting (Optional)
- 225g cream cheese
- 100g unsalted butter, room temperature
- 1.5 tspn vanilla extract
- 300g icing sugar
- Handful toasted walnuts, roughly chopped (garnish)
Instructions:
1. Begin with preparing your cream cheese frosting. In a stand mixer bowl, beat cream cheese and butter with a paddle attachment for 3 minutes.
2. Add vanilla and beat on medium speed for 1 minute. Gradually add icing sugar on low speed to combine, then turn up to high for 5 minutes.
3. Refrigerate for 2 hours to thicken before icing.
4. Preheat oven to 160°C. Line two 22cm round tins (or your preferred choice) with baking paper.
5. In a separate bowl, mix together gluten-free flour, Planet Organic Ceylon Cinnamon, Planet Organic Nutmeg, salt and baking powder. Set aside.
6. Spread walnuts onto a tray and toast for 5 minutes in the oven.
7. Grate carrots and set aside.
8. Using the paddle attachment of the stand mixer, beat oil and sugar together on medium speed for 3 minutes.
9. Add eggs and vanilla, then beat for 2 minutes or until incorporated.
10. Gradually sift in dry ingredients, beating on medium speed until combined and no lumps remain.
11. Fold in carrots, chopped walnuts and coconut, then pour batter into trays.
12. Bake for 35-40 minutes or until a skewer comes out clean.
13. Allow cake to cool entirely before icing. Garnish with your chopped walnuts.
