Apple Cinnamon Muffins | Easy Bakery-Style Muffin Recipe with Ceylon Cinnamon

Ingredients
Muffin Mix:

2 eggs
-
1/3 cup organic maple syrup
- 1/3 cup extra virgin olive oil
-
3/4 cup Greek yoghurt
-
2 tsp vanilla extract
- 1/4 cup milk of choice
-
1 3/4 cups self-raising flour (gluten-free optional)
-
1 tsp baking powder
- Pinch of salt
Apple:
-
1 apple, grated
-
1 apple, diced
-
1 apple, thinly sliced (to top the muffins)
Crumble:
-
3 tbsp rolled oats
-
1 tbsp brown sugar

Method
-
Preheat the oven to 200°C & prepare muffin liners.

Whisk together eggs, maple syrup, olive oil, yoghurt, vanilla & milk.

Add flour, baking powder, cinnamon and salt. Fold gently.

Stir through grated & diced apple. Let the batter rest for 5 minutes.
-
Fill liners 85-90% full. Top with apple slices & crumble.

Bake at 200°C for 5 mins, then reduce to 180°C for 15-17 mins. I love mine warm with tea or coffee & an extra sprinkle of cinnamon!
