I love how sweet apples taste when stewed with cinnamon, which led me to create this dessert for kids which tastes like a sweet treat, but only has 2 grams of added sugar per serve!
Cinnamon (especially delicate Ceylon cinnamon) enhances our perception of sweetness, which means you can add less sugary ingredients - great for little eaters!
This recipe only has 4 ingredients and is great for making with little helpers over the holidays, as they can help to chop, stir, cut pastry shapes and assemble their own apple pies.
Kid Friendly, 4-Ingredient Apple Pie
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour
Ingredients:

6 organic apples (Granny Smith or Pink Lady work well)

1 sheet of shortcrust pastry (I prefer all butter pastry)

1 tbsp raw organic sugar
Method:

Thaw your pastry by the package instructions and preheat the oven to 175c fan and set out four small ovenproof ramekins.

Peel and dice the apples then add to a large pot with 1/4 cup of water and a very generous sprinkling of cinnamon.

Cook until the apples are soft and allow to cool while you cut small shapes out of the pastry - you’ll need enough to just cover the top of each ramekin.

In a small bowl, mix 1 tbsp sugar with 1/2 tsp ground cinnamon& Spoon the apple mix into each ramekin, leaving about 1cm at the top, then arrange pastry shapes on top. You’ll only need about half - save the rest to serve on yogurt or pancakes for a tasty breakfast.

Sprinkle the sugar mix on top - I only used 1/2 tsp per ramekin, so you should have half leftover (keep it to sprinkle on chai lattes or toast, it’s delicious!)

Bake for 25 minutes or until pastry is golden and cooked, then allow to cool for 5 mins before serving.
- Serve with some berries or a dash of cream.
