Organic Spiced Maple Glazed Ham
Total Time: 2.5 hours
Servings: 20 servings
Ingredients
Ham:

5-6kg pre-smoked leg ham on bone
-
approx. 40 Planet Organic Whole Cloves
Spiced Maple Glaze:
-
250 mL organic pure maple syrup
-
1 Cup organic brown sugar
-
1 tsp Planet Organic Paprika
-
1/2 tsp Planet Organic Ceylon Cinnamon
-
1 TBS wholegrain mustard

Method

Preheat your oven to 180°C (350°F).

Carefully remove the skin from the ham, leaving a thin layer of fat. Score the fat in a diamond pattern by making shallow cuts with a sharp knife, about 1 inch apart.

Stud the ham with the cloves by pushing a clove into the middle of each diamond. This will keep the fat in place.

Place the ham into a deep roasting dish and add a cup of water to the bottom to help steam the ham. Tent the ham loosely with foil. This will prevent the ham from drying out, and assist in steaming so it heats through.

Place the ham into your pre-heated oven and bake for 1.5 hours.

Just before the 1.5 hours is up, combine the maple syrup, brown sugar, paprika, cinnamon and mustard into a saucepan. Heat the mixture over low heat, stirring
continuously until the glaze is well combined and slightly bubbling. This should only take a couple of minutes. -
After 1.5 hours, remove the ham from the oven and pour the spiced maple glaze over the entire surface of the ham, ensuring it gets completely coated.
- Place it back into the oven uncovered and bake for a further 1 hour. Every 15 minutes, take the ham out and baste it in the glaze that has dripped into the bottom of the roasting dish.


Serving

Once the glazed ham has achieved a deep brown colour, remove it from the oven.

Allow the ham to rest for 15-20 minutes before carving. This resting period will help the juices redistribute, making the ham juicy and flavourful

Save any remaining spiced maple glaze from the bottom of the baking tray to use as a drizzle or dipping sauce.
